Salsa Verde
For many days actually many months now, I have been madly in love with a salsa at a Mexican joint near my office (Jalesco, @ Bothell, wa). There is this thick, tangy emerald-sage-jade green that sends my mouth in a drool mode. I always wanted to make salsa at home ( Also its was one of my DIY project for 2015) . So this weekend when we went to get vegetables at First light farm in Carnation, WA; I was very happy to find Tomatillos ( pronounced as "Tomoti-yos"). I got about 8-10. I was so happy that I tried making salsa verde at home, now there is no going back to store bought salsa. Also the total time it took me was 40 mins out of which i just spent abt 5 mins actually "making" it, rest of the time was spent roasting and cooling them
Ingredients:
8-10 Tomatillos
2 jalapenos
1/4 t spn vinegar
handful of coriander/cilantro leaves
Salt as per taste
Method:
wash and dry the tomatillos and jalapenos. put it on a cookie sheet. Preheat the oven to 325 F, bake these for abt 10 mins. Depending on the oven you are using, you could be done in lesser time or it could take a few more minutes.
Remove from the oven and let it cool. Cut the tomatillos in medium sized cubes. Remove the outer skin of the Jalapenos. Put everything in the blender. Pulse it abt 5-8 times ( depending upon how smooth or chunky you like it).
All done. This is soo easy , I am definitely making this more often. You can eat this with Tortilla chips, or over enchiladas or tacos. I made Tacos with this. I will post the recipe next week.
